During my unforgettable journey to this picturesque paradise, I had the privilege of staying at a lively hostel, where I encountered Asif, the charismatic manager and a true ambassador of Kashmiri culture. It was here that I delved into the world of Kehwa, a traditional Kashmiri tea, as Asif graciously shared his recipe and guided us through the process of crafting this aromatic brew.
As I stepped into the hostel, I was embraced by the radiant warmth of Asif's smile. His genuine passion for his homeland and infectious enthusiasm quickly captivated the hearts of all those who crossed his path. It was no surprise that he became an instant favourite among visitors, who were drawn to his deep knowledge of the region and its vibrant cultural heritage. Asif effortlessly became everyone's go-to person, unveiling the hidden gems of Srinagar and weaving tales that brought the city's secrets to life.
As the sun descended, casting its golden hues over the horizon, the hostel's common area came alive with the rhythmic cadence of storytelling and the comforting aroma of Kehwa. Guests would gather, their voices weaving a tapestry of diverse tales, while Asif gracefully brewed cups of aromatic Kehwa, steeped in the traditions of Kashmir. With each sip, the delicate flavours danced upon our taste buds, leaving us delighted and curious. It was only natural that our hearts yearned to unlock the secrets behind this captivating elixir, so we expressed our eagerness to learn the art of making Kehwa. Asif, always the affable host, shared his knowledge and passion for Kehwa. He explained that this traditional Kashmiri tea is infused with exotic flavours such as saffron, cardamom, cinnamon, and cloves. Its delicate taste, combined with the therapeutic benefits of the ingredients, makes it a beloved beverage in Kashmiri culture.
Early one morning, Asif took us to a bustling spice market, where we witnessed the vibrant colours and intoxicating aromas of the spices used in Kehwa. We carefully selected the finest saffron strands, green cardamom pods, cinnamon sticks, and cloves, ensuring we had the highest quality ingredients to create our brew. Back at the hostel, we gathered around a large traditional Samovar, a brass kettle used for brewing the tea. Step-by-step, Asif guided us through the process, ensuring we understood the importance of precision and patience. First, we brought the water to a gentle boil in the Samovar, allowing it to create a comforting hum. The anticipation built as we prepared to create this aromatic elixir. Asif handed me a few green cardamom pods and showed me how to crush them gently. "This releases their fragrance," he said. We sprinkled the crushed cardamom into the brew. With utmost care, Asif took a pinch of saffron and dropped it into the simmering concoction. The water transformed into a captivating golden hue. He then passed me a cinnamon stick and a few cloves, and I dropped them into the tea. Suddenly, their earthy aromas took over the surroundings. We added crushed almonds along with a few dried rose petals. As we waited, the spices melded together, creating a symphony of aromas. When the time was right, Asif strained the brew into delicate tea cups. The fragrant liquid flowed through the sieve while leaving behind its remnants. Asif handed me a cup, and I took my first sip. The flavours harmonised in a delightful symphony of spices, saffron, and tea. It was a moment of pure bliss. Asif shared the satisfied smile of a teacher who had not only taught me the process of making Kehwa, but also a fragment of Kashmiri culture and tradition. Learning how to make the tea forged an everlasting connection with Kashmir.
Leaving Srinagar, I took with me memories of Asif's generosity and willingness to impart his knowledge of Kehwa-making. The experience gifted me a treasured piece of Kashmiri culture—a recipe that would forever remind me of the warm smiles, enchanting landscapes, and hospitality I experienced in Srinagar.
